A Dish Made for Gathering

Sausage and peppers became a familiar Italian-American gathering food because it scales beautifully. A skillet for the family can become a roasting pan for a picnic, festival, parish event, or neighborhood celebration without changing the character of the dish.

The recipe is straightforward: brown the sausage, soften onions and peppers until sweet, add garlic and herbs, then let everything finish together so the juices mingle. Serve it on a plate or pile it into a sturdy Italian roll.

A Matter of Tradition

Sausage and peppers is often thought of as classic Italian food in America, but its strongest identity is really Italian-American. Families adapted regional sausage traditions to the large community gatherings, street festivals, picnics, and parish celebrations that became part of immigrant life in the United States.

Every family has its preference: sweet sausage or hot, green peppers or red, tomato added or no tomato at all. That flexibility is part of the tradition. The important part is the balance of browned sausage, sweet peppers, onions, and enough pan juices to make the bread worth fighting over.

The Recipe

Lodge Picnic Sausage & Peppers

Use sweet Italian sausage, hot Italian sausage, or a combination of both. For a picnic crowd, prepare the peppers and onions ahead of time and finish everything together shortly before serving.

Lodge Picnic Sausage & Peppers — Ingredients

  • 3 pounds Italian sausage links, sweet, hot, or mixed
  • 3 large bell peppers, mixed red, green, yellow, or orange, sliced
  • 2 large yellow onions, sliced
  • 4 cloves garlic, minced
  • 3 tablespoons extra-virgin olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon crushed red pepper flakes, optional
  • 1/2 cup chicken stock or water
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons chopped fresh Italian parsley
  • 6–8 Italian rolls, optional for sandwiches

Lodge Picnic Sausage & Peppers — Preparation

  1. Heat 2 tablespoons of the olive oil in a large skillet or heavy roasting pan over medium heat. Brown the sausage well on all sides, working in batches if necessary.
  2. Remove the sausage to a platter. Add the remaining olive oil, then add the onions and peppers. Cook until they begin to soften and develop light caramelization, about 8–10 minutes.
  3. Add the garlic, oregano, basil, and optional crushed red pepper. Stir for about 30 seconds until fragrant.
  4. Return the sausage to the pan and add the chicken stock or water. Cover loosely and simmer over medium-low heat for 15–20 minutes, turning the sausage once or twice, until fully cooked.
  5. Remove the lid for the final 5 minutes so the pan juices reduce slightly and coat the peppers, onions, and sausage.
  6. Season to taste with salt and black pepper, then finish with fresh parsley.
  7. Serve on a platter for family-style dining or tuck one sausage link into an Italian roll with plenty of peppers and onions.
Picnic Note: This dish holds well for a crowd. Keep it warm in a covered roasting pan or slow cooker, and keep a little of the pan juice with the sausage so it stays moist during service.
