Pueblo Chile Cheese Fries are built for sharing — although nobody says you have to. Crisp hot fries are covered with melted cheese and generous spoonfuls of Pueblo Green Chile, then finished with onions, jalapeños, or other favorite toppings. It is simple food with unmistakable Pueblo character.

Chile cheese fries take three familiar favorites — potatoes, cheese, and Green Chile — and stack them together into one generous plate.
In Pueblo, the Green Chile is what gives the dish its local identity. The fries bring crispness, the cheese adds richness, and the chile settles into every corner of the plate.
This Lodge 2738 version is meant to be served immediately, while the fries still have some crunch and the cheese and chile are both hot.
A Matter of Tradition
Chile cheese fries can be dressed up in many ways, but they do not need much to be satisfying. Some tables add chopped onion, jalapeños, bacon, or sour cream. Others stop with just cheese and Green Chile.
The balance matters: enough Green Chile to flavor the entire plate, but not so much that the fries become soft before they reach the table.

The Recipe
Pueblo Chile Cheese Fries
This is the complete Lodge 2738 Pueblo Chile Cheese Fries recipe. Use the Lodge Pueblo Green Chile recipe or your own family version. Keep the fries crisp, the chile hot, and assemble everything just before serving.
Pueblo Chile Cheese Fries — Ingredients
- 2 pounds frozen restaurant-style French fries, or homemade fries
- 1 tablespoon vegetable oil, if needed for baking
- 1/2 teaspoon kosher salt, plus more to taste
- 2 cups shredded cheddar, Monterey Jack, or a blend
- 2 to 3 cups hot Pueblo Green Chile
- 1/2 small white or yellow onion, finely chopped, optional
- 1/4 cup sliced pickled jalapeños, optional
- 4 slices cooked bacon, crumbled, optional
- 1/2 cup sour cream, optional
- 2 tablespoons chopped fresh cilantro or parsley, optional
Pueblo Chile Cheese Fries — Preparation
- Cook the fries according to package directions or your preferred homemade method until deeply golden and crisp.
- While the fries cook, heat the Pueblo Green Chile gently in a saucepan over medium-low heat. Keep it hot without allowing it to scorch.
- Transfer the hot fries to an oven-safe platter, cast-iron skillet, or shallow baking dish. Season lightly with kosher salt.
- Sprinkle the shredded cheese evenly over the fries, making sure some cheese falls between the layers.
- Place the platter under a broiler for 1–2 minutes, or return it briefly to a hot oven, until the cheese is completely melted.
- Remove from the oven and spoon the hot Pueblo Green Chile over the fries. Distribute it generously while leaving some crisp edges exposed.
- Add chopped onion, jalapeños, bacon, sour cream, cilantro, or other toppings if desired.
- Serve immediately while the fries are hot, the cheese is melted, and the Green Chile is still steaming.
